This interdisciplinary paper is tailored to the food technology interests of the students involved. It covers advanced aspects of food science, technology and engineering applications relevant to the food sector in New Zealand and/or selected countries. Students undertaking thesis research in the food and biosciences area will find the course invaluable as it provides in-depth information on the food industry and associated technology, as well as helping develop research skills. The paper involves 5-6 modular studies on various aspects of the selected food industry plus a research project.
